Kusina Moderne: Not Your Ordinary Filipino Cuisine

Do you still remember the times when your grandparents serve your favorite Filipino food during your reunion? The dishes that your mom and aunties prepared for your family's get-together? The recipes passed down from your forefathers to the present generation?

Truly, Filipino cuisines are our comfort food. These dishes we all loved may not be the grandest but the joy and excitement every time it served on our tables is truly an indescribable feeling; but what happens when our all-time favorite dishes will be cooking in a French technique? To know more about the newest food hub in town, let's take a look at Kusina Moderne.

Opened in May 2019, Kusina Moderne opened its door serving us traditional and well-known Filipino dishes with a fancy look and a delicate taste. 

Staying close to its traditional taste, this go-to food hub prepares contemporary Filipino food through French techniques that are very close to the head chef and one of the co-owners, Chef Carlo Gunio.

Chef Carlo went back to the Philippines in 2018 to finally make his biggest dream into a reality which is to build his own restaurant after gaining culinary experience abroad.

One of the highlights of Chef Carlos' career is his former job at the French embassy in Washington D.C, United States of America as a 'sous' chef or the assistant chef and a pastry chef. 

The concept behind the restaurant is through the idea of elevating Filipino food with imagination, technique and presented in a deconstructed manner

Food choices are really a must-try at Kusina Moderne. For all food enthusiasts and crawlers out there, this hidden-gem in Makati offers one good astronomical experience.

 To start off the adventure here’s one of Kusina Moderne’s main courses and one of the bestsellers is the Binagoongang Baboy (Php 395) or roasted pork belly drizzled with bagoong or shrimp paste sauce. This is definitely a must-try!

Tuna Belly with Chimichurri (Php450) is a must-try at Kusina Moderne. The marinated tuna belly is broiled then charred for that smokey flavor, and well-complemented by its chimichurri sauce.

Adobong Pusit (Php 195) is the newest addition to the restaurant’s menu. It’s a sautéed squid on the bed of squid ink adobo sauce for that savory sauce. It’s extravagant look make this simple dish intimidating at first but it’s a must to be included on your list.

One of the unique food choices at Kusina is the Embutido Scotch Egg (Php195) which is a deep-fried chicken embutido with a runny soft-boiled egg inside for that yolk goodness and served with banana ketchup.

Our all-time favorite Halaan Soup (Php395) is another highlight at Kusina Moderne. It’s our very own Manila clams in a clear broth flavored with chili leaves, ginger, corn, and kamote tops, and served with garlic toast.

Who would have thought that our usual Filipino mechado can be turned into something classy with a twist? This is what Kusina Moderne serving us!

Mechado Tacos (Php195) is stuffed with shredded braised beef mechado, guacamole, cilantro, sour cream, and pickled red onion to balance out the saltiness.

This is one of the best sellers and definitely a must-try at Kusina Moderne-unique, new, and tasty!

For dessert, Cheesecake Flan (Php175) won the hearts of the many! it’s a combination of Graham cracker crust topped with smooth and creamy leche flan served with mango bits, sliced walnuts and Marie biscuit crumbs giving this dessert nice contrasts in flavor and texture.

Calamansi Tart (Php 245) is Kusina Moderne’s shocker! This panghimagas or dessert is indeed a masterpiece of the restaurant.

This tart highlights the pleasant sharpness of Philippine lime (which is balanced by the torched sweet cream over pastry).

The interior is simple but not boring. The place might look a little bare but surely, it will give us a whole new level of experience. Decors are limited. Wooden chairs and tables give us an impression of one unique Filipino trait which is the salo-salo or get-together and are meant for the diners to interact with their friends or family while enjoying the food.

The kitchen is very visible to the diners which is a plus 'cause they can see how the food is prepared and how the delicious scent is filling up the place.

Kusina Moderne is located in front of Makati Palace Hotel. If you’re coming from Ayala Avenue, you may take Makati Avenue going to Caceres Street via Polaris Street.
